The Heartless evolve through one of two ways. Gaining power through affinity to Darkness, or by devouring hearts. This, in turn, affects your evolution paths. However, all heartless begin as a mere Shadow.

As a note to people reading this levelup log, you don't transform into what the rank says. You are free to transform at will beyond level 3, and are required to at some stages. You may transform into anything logical, obviously limited to what kinds of heartless according to the path you take.

You cannot transform into any boss-level Heartless above the Darkside rank, and cannot assume the Darkside's form until rank 5 at the very least. Behemoths, Guard Armors, Trickmasters, and so on are not available to transform into.
